First, yes, lemon curd needs to be refrigerated. In regard to refrigerating a three tier cake, can you refrigerate each tier separately, then on the day of the wedding stack the tiers, then deliver the cake?
Furthermore, does lemon curd go bad? It shouldn't have broken down. It may be your recipe. It should be fine covered in the fridge for a couple of weeks. If you felt that your lemon curd looked funny and didn't smell good I would not use it.
Then, how do you store lemon curd?
Place plastic wrap directly on top of the curd and let set in the fridge for at least 30 minutes before serving. Store in the fridge for 1-2 weeks. Lemon curd can also be frozen for several month.
How long does store bought lemon curd last in the fridge?
Once processed, jars of lemon curd will keep in the refrigerator for 3 months until they are opened (after opening, they will only last 1 to 2 weeks). The surface of curd in sealed jars may darken slightly if kept longer than a month, but that is only an aesthetic concern, not a health hazard.
